last march aaron and I joined jon and rachel, claudia and dallas, and jeff and kerry for a seven day adventure in puerto escondito and oaxaca city, mexico. on our way back to oaxaca from puerto escondido we stopped to use the restroom at this spot where they were pressing fresh white corn tortillas. the quesadilla I ordered was one of the most delicious foods I ate during our trip.

    That’s because every ingredient in that quesadilla was made right where these women are standing – no “slow food” movement necessary, no USDA-labeled organic cheese – that’s just the way it is. Better.
